Ravioli with Fresh Mushrooms
When starting out any new hobby its always a good idea to start slow, once you’ve started growing mushrooms you’ll soon learn that you’ll have more than what you know what to do with. One way to utilize all the mushrooms is using it in dishes to add flavor to sauces. Next time, I will give you a super easy quick DIY recipe to impress your Significant Other or Potential GF/BF. Lets begin with a super duper simple light/fresh mushroom sauce that goes well with any sort of pasta.
Ingredients:
Ravioli (Any Type) - 1 lb
Olive Oil - 2 tbs
Shallots - 1
Mushrooms (Any Type) - 1 lb
Salt & Pepper - to taste
Butter - 4 tbs
Garlic - 2 cloves, crushed
Tyme - 2 tbs or a twig of fresh Tyme
Sage - 1 tbs
Balsamic Vinegar - 3 tbs
Instructions:
We want to prepare all our ingredients.
Finely chop Garlic and Shallots
Bâtonnet (1/2” thick) Mushrooms, if you washed your mushrooms make sure to let it dry off.
In a large Pot bring water to a boil and add a bit of salt. Once boiling add in the pasta, cook pasta till al dente, and strain. You will want to add a bit of olive oil to the strained pasta to prevent them from sticking together.
Save ½ cup (need about ¼ cup) of pasta cooking water.
Heat up your skillet or cast iron pan and add a dash of Olive oil. When the oil shimmers, add the shallot and cook until fragrant, 2-3 minutes. Add the mushrooms and sprinkle of salt and pepper. Cook for 5 minutes or until golden brown, stir and continue cooking until the mushrooms have caramelized, 3-5 minutes. Caramelizing is key as that is one way to “Flavor Town!” also known as Maillard Reaction.
Reduce heat to medium. Add the butter, garlic, thyme, and sage. Cook, stirring occasionally until the garlic is caramelized and fragrant, about 5 minutes.
Add the balsamic and a splash (about ¼ cup) of pasta cooking water. Cook for 2 minutes. Remove from the heat and discard the garlic cloves. You could substitute the balsamic vinegar for some red or white wine.
Divide the ravioli among bowls and spoon the mushroom sauce over top. Garnish with fresh herbs.
